Huitlacoche-------Mexico’s “Corn Truffle”

I decided to do my project on a fungus, called Huitlacoche. Huitlacoche, sometimes called corn mushroom, corn smut and Mexican truffle, is a fungus that grows on corn. Huitlacoche is a fungus which grows naturally on ears of corn. The fungus is picked and treated as a delicacy. The earthy and somewhat smoky fungus is used to flavor quesadillas, tamales, soups and other specialty dishes. When I first saw this food, I thought it was disgusting and gross. After I started reading about it, it actually sounded like a delicacy to Mexico. This word doesn’t translate in English, it stays the same. This word comes from the ancient Aztecs, and has a very large background behind it.

This delicacy is fairly rare because it only appears on ears of corn as they ripen, mostly after a heavy rain or period of high moisture.As the fungus grows, it pushes out of the shucks around the corn and becomes clearly visible in the field. Not all the corn in the field will be affected. The fungus looks like grey or silver dry bulbs inside the ears along normal kernels. It may look disgusting, but it is not to Mexico!

When fresh, the spongy patches of fungus are cooked with other strongly flavored ingredients such as chile and garlic. These seasonings give this fungus a lot of flavor and taste. Huitlacoche de Mexicana is a base that is often used in tamales, tacos, quesadillas and a variety of other dishes. It also is an excellent side dish alone or with a sprinkle of grated cheese. This is a very special, well-known, and a great dish to have and be served in Mexico.

These certain ears of corn are not found in and grocery stores around here. Therefore, I couldn’t get a chance to take any pictures from a store. I found some other pictures though. As they may look disgusting, you don’t know until you try it! I am not sure if I would try it, but maybe I will someday. Well, that’s it……That is some background information on Huitlacoche.
